Being the MVP mom of 3 budding sports stars, I totally get the rush. The struggle is real when you're trying to whip up a nutritious, delicious dinner amidst the hustle and bustle. That's why I've rustled up my top 3 quick and mouthwatering dinner recipes for us perpetually on-the-go parents.
Slam Dunk Stir-Fry
You're just one wok away from a touchdown dinner!
Ingredients:
1 pound of chicken breast, thinly sliced
Your fave veggies: bell peppers, snap peas, broccoli - you name it!
2 tablespoons of soy sauce
1 tablespoon of honey
1 tablespoon of olive oil

1 clove garlic, minced
Instructions:
In a large wok or skillet, heat the olive oil over medium-high.
Add chicken and cook until golden.
Toss in those colorful veggies and garlic, stir-frying until they’re just tender.
Drizzle in the soy sauce and honey mix, stir well and let it sizzle for a couple more minutes.
Serve with a quick side of rice or noodles.
2. Go-Goal! Grilled Cheese & Veggie Soup
Classic comfort for those chilly game nights.
Ingredients:
Your favorite bread
Cheese slices (Swiss, cheddar, or whatever makes your taste buds dance!)
1 can of vegetable soup
Butter for grilling
Instructions:
Butter the outsides of your bread, place a generous slice of cheese between them.
Grill on a pan until crispy and golden.
While the sandwich is cooking, warm up that can of vegetable soup.
Serve together and watch those tired, little athletes gobble it up!
3.Hat-Trick Tacos
Because Taco Tuesday shouldn’t just be a once-a-week thing!
Ingredients:
1 pound of ground beef or turkey
Taco seasoning
Taco shells
Lettuce, diced tomatoes, shredded cheese, and other favorite toppings
Instructions:
Cook the beef or turkey in a skillet until browned.
Sprinkle in the taco seasoning, mixing thoroughly.
Assemble your tacos with meat and top generously with your chosen delights.
Serve with a side of salsa, and maybe some guac if you're feeling extra festive!
